sweet potato chips
2 medium sweet potatoes
1 tablespoon Canola oil
1 teaspoon salt
1/4 cup ‘no sugar added’ apple sauce
2 tablespoon crushed pineapple
1 tablespoon ‘no sugar added’ apricot jelly
Preheat oven to 400 degrees.
Carefully puncture holes in the potatoes with fork and place in small bowl with some water.
Microwave on high for 3 minutes.
Turn the potatoes over and microwave again for another 3 minutes.
Thinly slice potatoes into chip sized pieces.
Oil cookie sheet.
Place potatoes on cookie sheet. Lightly drizzle with oil.
Sprinkle on salt.
Place in oven.
Turn over every two minutes.
Make dipping sauce by combining applesauce, pineapple, and jelly into small dish or saucer.
Chips are done when lightly browned, about 20 minutes.
